I’ve since increased the amount of flour to 2 cups with equally good results. The dough is just not as sticky now. For extra fiber, I have been making this recipe with a half-and-half mixture of all-purpose and whole grain pastry flour (1 cup of each). The biscotti are just as good and now I have the benefits of whole grains.

The correct cake pan size is 8-inch. There is a typo in the "Do I Have What it Takes?" section indicating you’ll need a 9-inch pan but the correct size is 8-inch.

If you don’t have ground flaxseed meal, you can substitute 2 tablespoons of oat bran for a total of 1/2 cup plus 2 tablespoons of oat bran. I also use this recipe to make Oatmeal Chocolate Chip Cookies. Just omit the cinnamon and substitute 1/2 cup of chocolate chips instead of the prunes.
