Homemade Pizza


Who doesn’t love pizza? I know I do. And I love to be healthy so I made it my mission to find a way to make healthy pepperoni pizza. This amazing crust comes from using a pizza pan with holes (I use a Williams Sonoma “Goldtouch” Nonstick Pizza Crisper and I love it!) A Kitchenaid stand mixer does all the work when making the dough but you can mix it in a bowl and knead by hand. My recipe is low in fat, and so delicious... you’ll see. Bread Pudding


I bake my own egg bread just to make this pudding but you can certainly use a store-bought loaf. Since bread cubes are hard to measure, I use a kitchen scale to get the exact weight. This pudding is so good, it’s even delicious served cold.

Chocolate-Almond Meringues


Egg whites are fat free so the only fat comes from the nuts and dark chocolate, both of which benefit the heart. Try to use a good quality dark chocolate (the darker, the more antioxidants). I use Scharffen Berger, which comes in a 3 oz. bar so it takes 1/3 of the bar. If you have a food processor and an electric stand mixer, these don't take much work - just time.

Dutch Baby


This dramatic pancake is a Sunday breakfast treat and a good way to add fresh fruit to your diet. You can fill the pancake with just about any fruit – strawberries, blueberries, peaches, raspberries, bananas, papaya, mango, pineapple, whatever is in season. It takes almost 15 minutes of beating but it’s so worth it. (see my "How-To" video for a demo)

Deviled Eggs


These are classic deviled eggs, which are my favorite. They take about 5 minutes to make and will keep for days in the fridge for whenever you need a high protein snack, or if you just want to impress your guests. (see my "How-To" video for a demo)

Crepes


You just need the right pan with sloped sides to make crepes. Use them for cheese blintzes, tender manicotti, or for a breakfast treat, try rolling them up with jam or other things like sliced bananas, lemon curd, or almost any fruit. They can be made ahead and stacked for later use. (see my "How-To" video for a demo)

Anti-Aging Jello


This dessert is an antioxidant powerhouse! Besides acai berry, there are other superfood juices you can also use, like pomegranate or blueberry. The best juices to use are ones that are fruit sweetened and low in sugar. I like to have this with a side of vanilla low fat frozen yogurt. (see my "How-To" video for a demo)

Orgasmic Pancakes


Better than sex? You might think so when you try these fluffy, delicious pancakes. It’s easier than you think to make pancakes from scratch… about 5 minutes to get the batter ready. It’s important not to over-mix the batter so do not use an electric mixer, just a spatula or spoon. Serve these with real maple syrup! (see my "How-To" video for a demo)

Classic Meringues


There’s no place you can buy anything close to these sensational homemade meringues and they are incredibly easy (and cheap) to make. But you must have an electric mixer, preferably a stand mixer, or even a hand-held. I dare you to try and eat just one. (see my "How-To" video for a demo)

My Addictive Granola


This recipe is very flexible so you can change up your dry ingredients, but reduce the oats by the same amount. For instance, if you add 1/4 cup of sunflower seeds, use 1/4 cup less of oats. If you add 1/2 cup of wheat bran, then you would eliminate 1/2 cup of the oats. As long as the amount of your dry ingredients remains the same. You will love this easy recipe! Easy Low-Fat Chocolate Pudding


You only have to look at the long list of ingredients on a box of pudding mix to know why I make my own. It just takes a few ingredients (and about 5 minutes) and it tastes a lot richer than you think. No junk, no chemicals, and it contains calcium for strong bones. Try this once and you’ll never go back to the box. (see my "How-To" video for a demo)

Oatmeal Pancakes


I love to make pancakes on Sunday morning. They need to be delicious, but when I make them, they also need to be healthy and do some good. These pancakes are all of that… delicious, low fat and healthy. What a great combination of soluble fiber (good for cholesterol) and insoluble fiber (good for colon health). A non-stick griddle is best since there’s no need for butter, and the secret to fluffy pancakes is: DO NOT OVER-MIX. A lumpy batter is a good batter.

My Kitchen Sink Cookies


One day, I couldn’t decide what kind of cookies to bake. I wanted oatmeal, but I love peanut butter, and then there’s chocolate chip! I decided to put them all into one and make them as healthy as I could. Let me tell you, EVERYONE loves these cookies. They have fiber, healthy fats, and are chewy and the oats can actually lower your cholesterol. So many people have asked for this recipe, I decided to share it with the world.

Chicken Parmesan


My version of Chicken Parmesan is low in fat and really good for you as long as you don’t fry it. Mine is baked. Chicken is a great source of protein for healthy skin, hair, and nails. This recipe takes 40 minutes from start to finish and my favorite way to serve it is with a side of spaghetti sprinkled with extra Parmesan.

My Streusel Coffee Cake


The good news is this cake has almost no saturated fat. The bad news is it will be gone by the next morning. If you want to impress your company, just serve this while it’s still warm out of the oven.
