Nachos
Nachos don’t have to be bad for you… you just have to make them with healthy ingredients. These nachos are nutritious enough to have for dinner. It takes a little work but so do most good things in life. Fresh ingredients make all the difference! (see my Cooking Videos for a demo)

Granola Bars
If I had known how easy these were to make, I would have started making my own granola bars years ago. Everything in one bowl and that’s it. You can use my “extras” or invent your own. Some suggestions: chopped almonds, walnuts, pecans or peanuts, dried blueberries, cherries, cranberries or raisins, dates, figs, sunflower seeds, pumpkin seeds, chocolate chips, etc. This is the perfect healthy (& portable) snack or an occasional breakfast on the run. 3-Hour Sweet Pickles
This recipe makes a sweet and tangy pickle but you can alter the amount of sugar or salt if you like. The best cucumbers for pickling are the “Kirby” type, which are about 5-inches long and kid of fat. Pickles, and all fermented foods, are good for you. Eat more!

3-Hour Dill Pickles
Nobody likes a limp pickle. This recipe makes a crisp & tangy dill pickle in just 3 hours! I use the 1 ½ lb. jar that spaghetti sauce comes in. All fermented foods contain probiotics so think of pickles as “friendly” for their friendly bacteria. A friendly pickle would say, “Hey, how you doin’? Go ahead... eat me. I’m down with that.”

Homemade Barbeque Sauce
It doesn’t get much easier than this. The beauty of this recipe is it’s very flexible: more of this – less of that – no problem. Add cayenne or Tabasco if you like but I like it just this way, not too hot, sweet, and sticky. I’ve never found a bottled sauce this good!

Caramel Corn
Don’t make this if you have no will power – it’s unbelievably good and won’t last long. Pop the corn fresh using an air popper, a pot on the stove or my paper bag microwave method (see my video) but do not use store bought popped or the packaged microwave kind. You’ll need a baking sheet with a rim so the mixture doesn’t spill out when you stir it. It's easy to make & may be the best caramel corn on the planet! (see my Cooking Videos for a demo)

Sesame Seed Breadsticks
I love crunchy food so these are crispy sesame seed breadsticks that keep for weeks because you bake them dry. For extra fiber, I combine whole wheat and all-purpose flour but you can use only all purpose or bread flour. Rolling the breadsticks takes a little practice but you’ll never find breadsticks this good in any store. A Kitchenaid stand mixer does all the work, or you can knead the dough by hand. Depending on your flour, add just enough water to make a soft dough. The dough needs to be a little sticky to hold the seeds. If not, rub a bit of olive oil on your hands. Deviled Eggs
These are classic deviled eggs, which are my favorite. They take about 5 minutes to make and will keep for days in the fridge for whenever you need a high protein snack, or if you just want to impress your guests. (see my Cooking Videos for a demo)
