Pączki


Growing up Polish, pączki were my favorite treat. They were actually fried doughnuts but they don’t have to be. Mine are oven-baked and delicious. Pączki are traditionally filled with jam but you can also use lemon curd, chocolate pudding, or custard, which I love! They’re even good with no filling! Strawberry Cake


This is a special occasion cake (like Denis’ birthday) that is so good everyone will remember it and probably ask you for the recipe! It’s basically a classic white cake with fresh strawberries and whipped cream frosting. The key is to find good fresh strawberries and have all the ingredients at room temperature. Apple Pie Bars


If you love apple pie as much as I do (who doesn’t?), here is your apple pie fix that is easier, faster, and get this... it’s healthier! The crust is made without shortening or butter, using heart-healthy canola oil. This is one of my best recipes. Pick up a square by hand or eat it with a fork with a little side of low fat frozen yogurt. These are so good, you may have to use my rule: One Per Person.

Caramel Corn


Don’t make this if you have no will power – it’s unbelievably good and won’t last long. Pop the corn fresh using an air popper, a pot on the stove or my paper bag microwave method (see my video) but do not use store bought popped or the packaged microwave kind. You’ll need a baking sheet with a rim so the mixture doesn’t spill out when you stir it. It's easy to make & may be the best caramel corn on the planet! (see my Cooking Videos for a demo)

Bread Pudding


I bake my own egg bread just to make this pudding but you can certainly use a store-bought loaf. Since bread cubes are hard to measure, I use a kitchen scale to get the exact weight. This pudding is so good, it’s even delicious served cold.

Chocolate-Almond Meringues


Egg whites are fat free so the only fat comes from the nuts and dark chocolate, both of which benefit the heart. Try to use a good quality dark chocolate (the darker, the more antioxidants). I use Scharffen Berger, which comes in a 3 oz. bar so it takes 1/3 of the bar. If you have a food processor and an electric stand mixer, these don't take much work - just time.

This dessert is an antioxidant powerhouse! Besides acai berry, there are other superfood juices you can also use, like pomegranate or blueberry.
